POTATO GNOCCHI (with 7 different sauces )

Gnocchi’s plump, pillowy texture and mild, delicate flavor make them perfect for rich, hearty sauces. With this recipe learn how to make super easy and quick Gnocchi's for any lunch or dinner.

INGREDIENTS
- Potatoes ( 3 – 4 medium sized )
- Flour ( 1 ½ cups )
- Salt ( 1 tsp )
- Egg ( 1 large )
STEPS
1) Put the unpeeled potatoes in a large pot and will the pot with water just enough to cover them and boil them until they are completely tender and easily pierced with a fork.
2) Drain the potatoes and let them cook enough that you can handle them and remove the skin.
3) Mash the potatoes or pass them through a ricer and let them cook.
4) Lightly flour a work surface. In a small bowl mix the flour with the salt. Add the egg to the potatoes and then add the flour mixture.
5) Mix with your hands until the flour is moistened and the dough starts to clump together; the dough will still be a little crumbly at the point. Gather the dough together and press it against the bottom of the bowl until you have a uniformed mass. Transfer it to the floured surface and wash your hands.
6) Knead gently until the flour is fully incorporated and the dough Is soft, smooth and a little sticky. Rest aside with a towel over it for some time ( 10 minutes )
7) Tear off a piece of the dough about the size of a large lemon and put the rest back so that it doesn’t dry out. With the palms of both hands, roll the dough piece on the floured surface into a rope about 3 cm in diameter. With a sharp knife cut the rope crosswise every 2 cm to make a square. Repeat until all the dough has been made into little squares, and sprinkle them with a little flour.

1) GNOCCHI IN BUTTER, SAGE AND SHAVED PARMESAN
2) GNOCCHI IN TOMATO SAUCE AND FRESH BASIL
3) GNOCCHI IN PESTO SAUCE
4) GNOCCHI IN MUSHROOM CREAM SAUCE
5) GNOCCHI IN GORGONZOLA SAUCE
