Lemon Bars with Shortbread Crust

You only need 7 ingredients to make these lemon bars. The lemon curd filling is extra thick and creamy and sits on an irresistible butter shortbread crust. Always bake lemon bars at a lower temperature to avoid over-baking. They’re simply the best lemon bars and are perfect for picnics, bake sales, spring brunches, etc.

INGREDIENTS
butter (1 cup)
white sugar (1/2 cup)
all-purpose flour (2 cups)
eggs (4)
white sugar (1 1/2 cups)
lemons (2, juiced)
STEPS
1) Pre-heat the oven to about 170 degrees C
2) In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan. and poke hoes with a fork so that the dough does not rise up.
3) Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
4) Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. Coat with a layer of powdered sugar for a finishing touch.
