MOCHI, without rice flour

These elastic wonders of glutinous rice cakes have captured the hearts of people worldwide. Today i'm going to teach you how to make fresh homemade mochi with a rice cooker and stand mixer. It is a fairly easy task, but I do want to warn you – mochi is super sticky and the process can be a handful.  Don’t let that stop you though because there is nothing like eating freshly pounded mochi! They are smooth, springy, and tactile.



INGREDIENTS 

- rice ( 2 cups )

- water ( 4 cups )

- sugar ( 8 table spoons )

- food coloring and flavoring ( optional )

- chocolate/strawberry/any type of filling

- corn starch ( 1 cup )


STEPS 

1) Wash the rice and empty them in a pot, add the 4 cups of water and let it boil with a lid on.


2) Once it starts boiling add the sugar and give it a stir.


3) Let the rice finish cooking and drain it with the help of a strainer and empty it into a bowl to cool it down.


4) After cooling, mush it in a food processor till it becomes like dough and there are no grains of rice. ( During this step, you can add in the food coloring and flavor of your choice )


5) Dust your counter and your hands generously with corn flour. Take a small lump of the dough and flatten it out with your hands. Fill in the center with a filling of your choice and fold the dough into a ball.


6) Keep all the Mochi balls in the fridge for about an hour before consuming, you can also warm it in a microwave.





TIME TAKEN 

20 mins + 30 mins + 1 hour freezing time.


There you go~ Super soft Mochi that are easy to make.
