MANGO CHICKEN

Mango chicken has always been one of my favorite types of curry. It's savory yet sweet gravy never fails to wow anyone. super easy and quick to make.

INGREDIENTS
- Oil ( 2 tbs )
- Onion ( large chopped )
- Red bell pepper ( ½)
- Garlic cloves ( 2 )
- Minced ginger ( 2 tbs)
- Yellow curry powder z( 2 tbs )
- Cumin ( ½ tsp )
- Mangoes ( 2 )
- Vinegar ( 2 tbs )
- Coconut milk ( 1 full can )
- Chicken ( 1 ¼ pound )
- Raisins ( 1/3 cup ) optional
- Coriander
STEPS
1) Cook the onions, bell peppers, garlic, ginger, and spices. The spices will absorb some of the oil, so if it starts to stick and a little more oil into the pan.
2) Add the Vinegar, coconut milk and on of the two chopped mangoes.
3) Remove the pan from heat and scoop the sauce into a blender and puree it until smooth.
4) Return the sauce to the pan and add the chicken pieces and the raisins. Return to a low simmer and cover the pan for about 8-10 mins. The chicken should be cooked by now, take a knife and check if it has fully cooked by cutting open one of the bigger pieces.
5) Add the remaining mango into the pan along with the cream, if using. Let it cook at a vary low temperature for another minute or two while cooking and do not let it boil or the cream will curdle.
6) Adjust the seasoning, if it is too sweet add a little bit of vinegar, and if not sweet enough add a dash of sugar and salt and pepper to taste. Garnish with coriander.
There you go~ super easy sweet and savory Mango Chicken, ready in minutes.
