EGG'S FLORENTINE

Whether it be breakfast, lunch or dinner this dish will never fail you. famous for its delicious combination of eggs, fresh healthy spinach and an English muffin topped of with buttery hollandaise

INGREDIENTS
- Butter ( 15g ) (plus extra for toast)
- Spinach ( 200g )
- Bread ( 2 slices )
- Eggs ( 4 )
- Chopped parsley ( 3 tbs )
- Hollandaise sauce
- Salt and pepper
STEPS
1) Half fill a sauce pan with water and bring to boil. Meanwhile heat and melt the butter in another pan.
2) Add the spinach in the buttered pan and cook for 1-2 minutes or until wilted. Season with salt and pepper and set aside.
3) Toast the bread until lightly brown.
4) Poach the eggs (2 at a time) until the whites are firm and the yolks soft.
5) Butter the toast, divide the spinach between the two breads and top them with the eggs. Mix the parsley with the hollandaise sauce and spoon over the eggs. Serve with ground black pepper.
