Happy Easter! A festival celebrated all over the world in celebration of the Resurrection of Christ.These 4 easy recipes can help you spice up not only your Easter lunch but any such occasion!
CARROT CHIPS

Preheat the oven to 170 degrees C or you could use a microwave at the highest setting.
Take four carrots and use a mandolin or a knife to thinly slice them.
Place the carrots on a parchment paper and lightly sprinkle them and bake them for 45 minutes or put them in the microwave at 1 minute intervals until crisp.
GARLIC ROASTED POTATOES

Preheat the oven to 170 degrees C.
Slice 2 round potatoes to chunks and mix them with 2 tbs of olive oil, 4 minced garlic cloves and a sprinkle of salt.
Bake them for 45 minutes or until tender and crisp.
SPRING VEGETABLE CARBONARA

Bring a large pot to boil and add in 50 g of frozen peas and cook till tender, about 2 minutes. Using a spoon transfer the peas and add the spaghetti and cook till done, about 9 minutes.
Reserve about 3/4 cup of the water and drain the last.
Now heat a pan over medium heat and add asparagus and cook until tender.
In a large bowl whisk together 2 large eggs and 50 g of grated cheese. Add the pasta and 1/2 cup of the previously reserved pasta water and toss to coat well, adding more if necessary.
Fold in the asparagus and peas, along with lemon zest, lemon juice and basil with about 1/4 tsp of pepper.
SIMPLE DEVILED EGGS

Slice 6 hard boil eggs into half after removing the shell.
Remove the yolks and set the whites aside. In a large bowl, mash the yolks together.
Stir in 2 tbs of mayonnaise, 1 tsp of sugar, 1 tbs of vinegar, 1 tsp of mustard, a sprinkle of salt, half a chopped onion, some finely chopper coriander or celery and 1 pink of paprika to taste. after mixing this, refill the egg yolk into the egg whites and serve chilled.
