BUTTER COOKIES (egg less)

These crisp, delicious egg less butter cookies have a rich flavor and a melt in your mouth consistency that will have you coming back for more. Good old fashioned butter cookies are hard to beat! These holiday staples are delicious at any time of the year and the best part is: the dough can be made months ahead and baked off for an amazing on demand treat with just four easy ingredients.

INGREDIENTS- Flour ( 240 g )
- butter ( 230 g ) ( room temperatures )
- sugar ( 100 g )
- vanilla extract ( 2 tsp)
STEPS 
1) In a large bowl, whisk the butter,sugar and vanilla extract together on medium-high speed until smooth, about 2 minutes.

2) Then add in the flour a little at a time until a ball of dough is formed. ( Optional: you can add in chocolate chips or dried fruits at this point)
3) Line your baking tray with parchment paper or wipe it with cooking oil and shape the cookies ( medium sized) on it. After that, refrigerate your shaped cookies for about 30 minutes.
4) Preheat you oven to 160 C and bake the cookies for 15 mins or until golden brown.

5) After baking leave you cookies out to air for 30 minutes or until cooled. ( This is important as your cookies will harden and form)
6) Plain cookies stay fresh in an airtight container at room temperature for up to 1 week. Cookies with chocolate or cherries stay fresh in an airtight container at room temperature for 3 days or in the refrigerator for 1 week.
TIME TAKEN 1 hr ( prep) + 15 min ( baking) + 30 mins ( cooling)
*NOTE - If you want to make peanut butter cookies, just add in 2 tbs of peanut butter in the batter and and addition of 1 tbs of flour.
